White Chocolate Cupcakes

These white chocolate cupcakes are super easy to make.
4oz (125g) butter, softened
3-1/2oz (100g) white cooking chocolate
1 cup granulated (caster) sugar
1/2 cup milk
1 egg, lightly beaten
3/4 cup all-purpose (plain) flour
1/2 cup self-raising flour
1 teaspoon vanilla essence
Preheat oven to 320F (160C).
Line cupcake trays with cupcake papers.
In a medium saucepan, combine the butter, chocolate, sugar and milk and stir over a low heat until the chocolate has melted (approx 5 minutes).
Stir until the mixture is smooth and well combined.
Allow to cool slightly.
Stir in the lightly beaten egg.
Add the sifted flours and vanilla essence and stir until just combined.
Spoon mixture into cupcake trays.
Bake for 30 minutes or until a skewer inserted into the center of a cupcake comes out clean.
Cool in trays for 5 minutes before turning onto a wire rack to cool completely.
Frost with white chocolate frosting.
