Have you ever tasted Whoopie Pies? They are a delicious cross between cupcakes and biscuits which are sandwiched together with a flavor-filled creamy frosting.
It is commonly believed that these cakes were first made and named in New England. The story goes that when children opened their lunchboxes and found these sweet treats they shouted "Whoopie". Such was their excitement when Mom packed one for lunch or morning tea - or preferably packed more than one!!
I had heard about these before I attempted to make them. For years my mother-in-law made powder puffs filled with strawberry jam and whipped cream and these are a similar concept.
Also known as gobs, black-and-whites, bobs, or "BFO"s for Big Fat Oreos, these little cakes have now earned their place at fashionable morning and afternoon teas. They have come a long, long way from the basic pies that were first created from leftover cake batter.
Similar to cupcakes, you can be as creative as you wish with the range of cake and fillings only limited by your imagination. Whoopie pie recipes are now readily available. The first little pie I ever made was chocolate with a peanut butter filling and it was a huge favorite.
To make baking even easier, it is definitely worth purchasing a whoopie pie pan. It means that all your little pies are of equal size and it is easy to match them up size-wise for filling.
These are really easy to make but to make the job even easier and quicker there are whoopie pie makers available.
