Ricotta Filling

This easy ricotta filling recipe is great with lemon, or vanilla cakes and cupcakes.
1-1/4 cups (250g) ricotta
2 tbsp Grand Marnier
2 tbsp confectioners (icing) sugar
1 tbsp finely grated orange rind
Combine all ingredients in the small bowl and stir with a wooden spoon until well combined.
You can substitute the lemon rind and replace with orange or lemon rind. I have also replaced with a teaspoon of vanilla extract.

Thanks so much for sending in your recipe for ricotta filling.
I have an orange and almond cake recipe where I use a similar filling recipe. I will try your recipe next time.
This recipe would also be great as a filling for italian cannoli and other pastries.
The filling recipe is a great basic recipe that it would be easy to add other flavors to it. I would suggest adding grated chocolate, dried fruit or chopped nuts. These could all be added or any combination you desire.
