Peanut Butter Cupcake

I love peanut butter and this peanut butter cupcake recipe is great.
I always frost these cupcakes and seem to alternate between using peanut butter or chocolate butter cream. Sometimes for a real treat I top them with peanut butter butter-cream and then drizzle with melted dark chocolate. Yum!
2oz (60g) butter, softened
8oz (225g) light brown sugar
40z (115g) peanut butter
2 eggs
1 teaspoon vanilla essence
8oz (225g) all-purpose (plain) flour
2 teaspoons baking powder
3fl oz (90ml) milk
Preheat oven to 350F (180C).
Line cupcake trays with cupcake papers.
Put butter, sugar and peanut butter in a medium bowl of an electric mixer and beat together until pale and fluffy (approx 3-4 minutes).
Gradually add lightly beaten eggs and vanilla essence.
Sift together the flour and baking powder and fold into mixture together with the milk.
Spoon into cupcake trays.
Bake for 20-25 minutes or until a skewer inserted in the center of a cupcake comes out clean.
Leave in trays for 5 minutes before turning onto a wire rack to cool completely.
