Orange Cake Recipe

This is my favorite orange cake recipe. Sometimes I make one large cake and sometimes I turn the mixture into orange cupcakes.
1 orange, grated and juiced
4oz (125g) butter
3/4 cup sugar
2 eggs
1 1/2 cups cake (self-raising) flour, sifted
1/4 cup milk
Preheat oven to 350F (180C).
Beat butter and sugar in an electric mixer until pale and creamy.
Add eggs, one at a time, and beat well.
Stir in orange rind.
Fold in flour, milk and orange juice.
Spoon mixture into prepared cupcake trays or cake tin.
Bake for approx 20 minutes for cupcakes and 45 minutes for a cake or until a skewer inserted in the centre of cake comes out clean.
Leave in trays for 5 minutes before turning onto wire rack to cool completely.
When cold, frost with
cream cheese frosting or
orange glace frosting.
I often add 1 tblspn poppy seeds to the mixture.
