I hope it is ok to send in a recipe which uses a box cake mix!!
This really easy recipe for moist gingerbread cupcakes uses a box cake mix as the base.
1 box vanilla cake mix
1/2 cup buttermilk
1/2 cup molasses (treacle)
1/3 cup vegetable oil
4 eggs, beaten
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Preheat oven to 350F (175C).
Line cupcake trays with cupcake papers.
Mix together all the ingredients and stir until just combined.
Spoon mixture into cupcake trays.
Bake for approx 15 minutes or until a skewer inserted into the center of a cupcake comes out clean.
Leave in trays for 5 minutes before turning onto a wire rack to cool.
Can be dusted with confectioners sugar or frosed with cream cheese or lemon frosting.
Hi Rochelle
Of course it is ok to send in your recipe which uses a box cake mix.
The addition of molasses, buttermilk and the spices would make a yummy gingerbread mixture.
If using buttermilk turns people off making cupcakes, substitute it with milk and add about a tablespoon of vinegar to it. Leave to stand for 5 minutes until the milk has curdled and then add to cupcake mixture.
Thanks again for sending in your recipe, Rochelle.
