Mini Cupcakes

I love mini cupcakes as they are the perfect size for morning and afternoon teas. They are also perfect for parties where only finger food is being served.
When a recipe states that it is sufficient for 12 large cupcakes, I find that it usually makes about 30 mini cupcakes.
They don't take long to cook so your little treats are ready in no time.
I always make thse orange cupcakes as mini bite-sized cupcakes.
1-1/2 cups all-purpose (plain) flour
1 tablespoon baking powder
6oz (170g) butter, softened
3/4 cup superfine (caster) sugar
3 eggs, lightly beaten
grated rind and juice of one small orange
Preheat the oven to 375F (190C).
Line mini cupcake trays with mini cupcake papers.
Put sifted flour and baking powder, together with butter, sugar and eggs into the medium bowl of an electric mixer and beat well until the mixture is smooth.
Stir through the finely grated rind and juice of an orange until well combined.
Spoon mixture into cupcake trays.
Bake for 12-15 minutes or until golden and a skewer inserted in the center of a cupcake comes out clean.
Leave in trays for 5 minutes before turning onto a wire rack to cool completely.

I also love the size of these small cupcakes. Until a few years ago there was not a very large range of cupcake papers available in the mini size but now that the range has increased I find that I am making this size much more often.
I agree that they are perfect and people don't feel so guilty having a cupcake when it is only bite-size. It is a treat without the guilt.
