Marshmallow Frosting

This is a really easy recipe for marshmallow frosting. It is best used the day it is made.
It is a great consistency and is really suitable for piping onto cupcakes or cakes.
The frosting will set slightly on standing.
2 teaspoons gelatine
4 tablespoons water
1/2 cup granulated (caster) sugar
Combine gelatine and 2 tablespoons of water in a small bowl suitable for the microwave. Microwave on high for 20 seconds until gelatine has dissolved.
In a small bowl of an electric mixer, beat remaining water and sugar until mixture is as white as possible (approximately 5 minutes).
Add gelatine mixture and continue beating for 5-6 minutes until the frosting is thick and white.
