Kids Cupcakes

My kids love making (and eating) these cupcakes. They can be made with your favorite color so they are suitable for so many special occasions.
You can make them red for Valentine's Day or green for St Patrick's Day.
I don't know where I got the recipe originally and I just call them my "kids cupcakes" as children, both big and little all enjoy these. I hope you enjoy them as well.
1 1/2 cups self-raising flour
2/3 cups superfine (castor) sugar
4oz (125g) butter
3 eggs
2 fl oz (1/4 cup) milk
food coloring
Preheat the oven to 350F (180C).
Line cupcake trays with cupcake papers.
Put flour, sugar, butter, eggs, milk and a few drops of food coloring in the bowl of an electric mixer.
Beat until mixture is smooth (approx 3-4 minutes).
Spoon cupcake mixture into cupcake trays.
Bake for 15-20 minutes or until a skewer inserted in the center of a cupcake comes out clean.
Cool in trays for 5 minutes before turning onto a wire rack to cool completely.
When cold, top with your favorite frosting.
