Gluten Free Chocolate Cupcakes
Gluten Free Chocolate Cupcakes are great served as a dessert with cream and berries. Or, the chocolate cupcakes can be butterflied and topped with cream and mini choc chips.
These gluten-free cupcakes prove that a gluten intolerance doesn't mean an end to sweet treats.

Ingredients:
- 1 1/3 cup gluten-free chocolate
- 3/4 cup butter
- 6 eggs
- 1/2 cup sugar
- 2 tsp gluten-free vanilla extract
Preparation:
- Preheat oven to 350F (180C).

Line cupcake trays with cupcake liners.

Stir or microwave chocolate and butter until smooth.

Remove from heat and cool until room temperature.

In large bowl, mix egg yolks and 1/4 cup sugar until very thick and pale (3 minutes).

Fold in chocolate/butter mixture and vanilla.

Using clean, dry beaters, beat egg whites and remaining 1/4 cup sugar until stiff peaks form.

Fold egg whites into chocolate mixture.
- Spoon into cupcake trays.
