Gluten Free Chocolate Cupcakes

Gluten Free Chocolate Cupcakes are great served as a dessert with cream and berries. Or, the chocolate cupcakes can be butterflied and topped with cream and mini choc chips.

These gluten-free cupcakes prove that a gluten intolerance doesn't mean an end to sweet treats.

Ingredients:

  • 1 1/3 cup gluten-free chocolate
  • 3/4 cup butter
  • 6 eggs
  • 1/2 cup sugar
  • 2 tsp gluten-free vanilla extract

Preparation:

  • Preheat oven to 350F (180C).
  • Line cupcake trays with cupcake liners.
  • Stir or microwave chocolate and butter until smooth.
  • Remove from heat and cool until room temperature.
  • In large bowl, mix egg yolks and 1/4 cup sugar until very thick and pale (3 minutes).
  • Fold in chocolate/butter mixture and vanilla.
  • Using clean, dry beaters, beat egg whites and remaining 1/4 cup sugar until stiff peaks form.
  • Fold egg whites into chocolate mixture.
  • Spoon into cupcake trays.
  • Bake for 25-30 minutes.
