Gluten Free Apple Cupcakes
Gluten free Apple Cupcakes are easy to make. These gluten-free cupcakes are similar to a muffin in texture.
What is gluten? Gluten is the sticky stuff which helps prevent your
baked goodies from crumbling. It also traps pockets of air, improving
the texture of your apple cupcakes.
In this recipe gluten has been replaced with xanthum gum, which is readily available from health food stores and Celiac Societies.

Ingredients:
- 1 3/4 cups sugar
- 3 eggs
- 1 cup oil
- 2 cups gluten-free flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp vanilla essence
- 1 tsp xanthum gum
- 2 cups chopped apple
- 1 cup chopped nuts
Preparation:
- Preheat oven to 375F (185C).

Line cupcake trays with cupcake papers.

Combine sugar, eggs and oil and mix until creamy.

Sift together flour, cinnamon, baking soda and salt and mix into egg mixture, together with vanilla essence and xanthum gum.
