Fudge Frosting Recipe

4oz (125g) cooking chocolate
1-1/3 cup milk
4 cups confectioners (icing) sugar
2 tbsp light corn syrup
2 tbsp butter
1 tsp vanilla extract
Place chocolate and milk into a small saucepan and stir over low heat until chocolate has melted.
Add confectioners sugar, corn syrup, stirring until the sugar has melted.
Bring to the boil and simmer, covered, for 3 minutes.
Have a small bowl of cold water ready and drop a small amount of mixture into the cold water. The fudge frosting is ready when it forms a soft ball when dropped into the water.
Remove mixture from heat, stir in butter and vanilla and let cool.
When lukewarm, beat until the mixture is creamy and thick enough to spread. Mixture can either be whisked by hand or beaten with an electric mixer.

It certainly looks thick and "fudgy" and I can't wait to try it. This fudge frosting with a chocolate cake or cupcakes would be ideal at Easter time - definitely a chocoholics dream!
