Easy Chocolate Cupcakes

These easy chocolate cupcakes are really moist and fudgy. My family always ask me to make these and because the recipe is so simple I make them often!!
8oz (250g) butter
1 cup plus 3 tablespoons superfine (castor) sugar
1-1/2 cups all-purpose (plain) flour
1/2 cup cocoa powder
1 tablespoon baking powder
4 eggs
Preheat oven to 350F (180C).
Place cupcake liners in cupcake trays.
Combine, butter, sugar, flour, cocoa, baking powder and eggs in a bowl and using an electric mixer, beat until smooth.
Beat for approx 2 minutes or until mixture has lightened in color.
Spoon mixture into cupcake trays.
Bake for 15 minutes or until a skewer or toothpick inserted into the middle of a cupcake comes out clean.
Leave in trays for 5 minutes before turning onto a wire rack to cool completely.
Top with your favorite frosting or icing, or dust with confectioners (icing) sugar.

I do love these recipes where everything goes in the mixing bowls and gets beaten together. This recipe is definitely one of the easiest cupcake recipes and I can't wait to try it.
