Easy Chocolate Cake

This is a really easy chocolate cake recipe that I make up into either a cake or cupcakes.
4fl oz (125ml) water
2oz (60g) butter
2 tablespoons cocoa powder
5oz (150g) all-purpose (plain) flour
1/2 teaspoon bicarbonate of soda
7-1/2oz (220g) sugar
1 egg
2fl oz (60ml) buttermilk
1/2 teaspoon vanilla essence
Preheat the oven to 300 F (150C).
If making cupcakes, line cupcake trays with cupcake papers or grease and line cake tins with non-stick baking paper.
Place water, chopped butter and sifted cocoa in a small saucepan over a medium heat and stir until butter has melted.
Sift together the flour and bicarbonate of soda and place in a bowl with the sugar.
Add the butter mixture and stir to combine.
Add te egg, buttermilk and vanilla and stir until well combined.
Spoon mixture into cupcake trays or cake tin
For cupcakes bake for 15-20 minutes or until a skewer inserted in the center of a cupcake comes out clean. If making a cake it will need to bake for 40-45 minutes.
Leave in trays or cake tin for 5 minutes before turning onto a wire rack to cool completely.
Frost with either
chocolate fudge frosting, or
chocolate ganache.

Thanks so much for sending in your easy chocolate cake recipe. Thanks also for giving both the cake and cupcake directions.
I love cakes with buttermilk as the addition of buttermilk makes them lighter and moister. If you haven't got any buttermilk in the fridge don't let that stop you from making this cake. All you need to do is use the same quantity of full-cream milk and add a tablespoon of vinegar. Let it sit for a couple of minutes till it apears to be curdling and add the milk to your cake mixture.
