Coconut Frosting

I love this coconut frosting on plain vanilla cupcakes as the flavor just seems to lift the cupcakes without overpowering them.
4oz (125g) butter, softened
2 cups confectioners (icing) sugar
1/4 cup coconut-flavored evaporated milk
1 teaspoon coconut essence
1 teaspoon strawberry essence
4 drops rose-colored food coloring
Beat butter in a small bowl of an electric mixer until pale and creamy.
Add confectioners sugar, a spoonful at a time, beating well after each addition.
Continue adding sugar until the mixture is smooth and creamy.
Add evaporated milk and continue beating.
Divide mixture into two bowls.
To one bowl, add rose-colored food coloring and strawberry essence and beat well.
To the other bowl, add coconut essence and beat well.
Pipe some of each frosting onto a cupcake and use a knife to swirl the frosting together gently.
Alternatively, frost half of your cupcake pink and the other half white.
Sprinkle with shredded coconut or toasted coconut flakes.
