I saw this recipe for chocolate orange cupcakes in my local newspaper. - The Sunday Times Magazine - and couldn't believe how easy the recipe looked. And it turned out just like the photo. (I used their photo as I am a hopeless photographer).
4oz (125g) butter
4oz (125g) dark chocolate, chopped
2 eggs
5oz (150g) caster sugar
3oz (90g) almond meal
3 tablespoons cocoa, sifted
1 tablespoon orange-flavored liqueur
1 tablespoon finely grated orange rind
Icing sugar, for dusting
Double (thick) cream and raspberry (or strawberries) to serve
Preheat oven to 180C (350F).
Melt the butter and chocolate in microwave or in a small saucepan over low heat. Stir until melted and smooth.
Place eggs and sugar in a bowl and whisk lightly to combine. Add melted chocolate and butter to egg mixture and stir gently.
Add almond meal, cocoa, liqueur and orange rind and fold through.
Pour into greased cupcake tin and bake for 25-30 minutes or until set.
Let cupcakes cool in tin.
Dust with sifted icing sugar and serve with berries and cream.
** I used 1 cup cupcake tins and this quantity made four chocolate orange cupcakes.
