Chocolate Icing Recipes

These are my two favorite chocolate icing recipes.
4oz (125g) chocolate, roughly chopped
1oz (30g) butter
3 tablespoons water
Stir the chocolate with the butter in a small saucepan over low heat until the chocolate melts and the mixture is smooth and glossy. Do not overheat.
The icing is ready when it thickly coats the back of a spoon.
The icing will set slightly on cooling. It can either be used when cooled and thickened or poured over cupcakes or cakes when still warm. If poured over whilst still warm it will trickle down the side of the cakes.
My other favorite recipe is even easier as it doesn't require the stove and waiting for it to cool. It is ready in minutes.
1 cup butter, softened
4 cups confectioners (icing) sugar
1-1/2 cups cocoa powder
1 teaspoon vanilla extract
1/2 cup milk
In a large mixing bowl, cream butter and vanilla extract until pale in color.
Gradually beat in the sifted confectioners sugar and cocoa.
Add enough milk until frosting is a suitable consistency for spreading. You may need less or more milk to reach your desired texture.
