Chocolate Apple Cupcakes
A friend gave me the recipe for Chocolate Apple Cupcakes years ago. It is still a family favorite.
This chocolate cupcake recipe is so easy to make as everything goes in the food processor together. The cupcakes are literally made in seconds.
I always used to think he hardest part of making these cakes was peeling
and chopping the apples. But now I still peel the apples but chop into
fairly large pieces and let the food processor do the rest.

Ingredients:
- 6oz (185g) butter, chopped
- 1 1/4 cups (275g) castor sugar
- 3 eggs
- 2 cups (300g) self-raising flour
- 1/3 cup (35g) cocoa
- 1/4 tsp bicarb soda
- 1/3 cup (80ml) water
- 2 medium apples, peeled, cored and finely chopped.
Preparation:
- Preheat oven to 160C (350F).
- Place cupcake liners in tray.
- Combine all ingredients in large bowl of a food processor and blend until well combined, scraping down the side of the container occasionally.
- Spoon into cupcake trays.
- Bake for 15 minutes or until a skewer inserted in the center of a chocolate apple cupcake comes out clean.
- Stand for 5 minutes before turning on to wire rack to cool.
Cakes can either be frosted or covered in sifted confectioners (icing) sugar.
