Champagne Cupcakes

I always make these champagne cupcakes for birthdays, Christmas and New Year. I usually use white sparkling wine but tried using red sparkling wine and tinted the frosting pale pink and they were a huge success!!
1 box white cake mix
1 cup champagne or sparkling wine
1/3 cup vegetable oil
3 eggs, lightly beaten
Preheat oven to 350F (175C).
Line cupcake tray with cupcake papers.
To a large bowl,add cake mix,champagne, eggs and vegetable oil and beat with an electric mixer for approximately 2 minutes.
Spoon mixture into cupcake trays.
Bake for 15-20 minutes or until a skewer inserted into the center of a cupcake comes out clean.
Leave in trays for 5 minutes before turning onto a wire rack to cool completely.
Champagne Icing:1/2 cup butter
3 cups confectioners (icing) sugar
1/4 cup champagne
1 teaspoon vanilla essence
Food coloring (optional)
In a small bowl beat butter with an electric mixer until pale in color.
Gradually add confectioners sugar, champagne and vanilla essence.
Beat until frosting is smooth and creamy.

Boxed cake mixes can be a great base to use when you add your own "extras" to make it a little special.
I sometimes think I should add another recipe category so that people are happy to send in their box mix recipes.
