Best Cupcakes

These are the best cupcakes I have ever made. They are really easy because everything goes in the bowl and gets beaten together. They are prepared in minutes.
7-1/2oz (225g) butter
2 cups sugar
3 cups self-raising flour, sifted
4 eggs
1 cup milk
1 teaspoon vanilla
Preheat oven to 350F (180C).
Line cupcake trays with cupcake papers.
Put all ingredients in the medium bowl of an electric mixer.
Beat on low speed until well combined and then increase speed to medium and continue beating for a further minute.
Spoon or pipe mixture into cupcake trays.
Bake for 15-20 minutes.
Cool in trays for 5 minutes before turning onto a wire rack to cool completely.
Frost with your choice of frosting, however, I love them iced with butter cream frosting.
Frosting:40z (125g) butter, softened
1-1/2 cups confectioners (icing) sugar
2 tablespoons of milk
Place butter in small bowl of an electric mixer and beat until the butter is as white as possible (approx 5-6 minutes).
Gradually add confectioners sugar, a tablespoon at a time, until well combined.
Add milk until frosting is of spreadable or piping consistency.
