Berry Cupcakes
Berry Cupcakes can be made using any frozen berry. Choose your favorite berry to add to this fluffy, moist cupcake.
I love blueberries but have also used strawberries and raspberries in this really quick and easy cupcake recipe.
You will find that these cupcakes never last long in the house - they are yummy!

Ingredients:
- 1 cup extra light olive oil
- 3 eggs
- 3/4 cup caster sugar
- 3 tsp vanilla essence
- 2 1/2 cups self-raising flour
- 3/4 cup milk
- 1 cup frozen berries
Preparation:
- Preheat oven to 160C (325F).

Line cupcake trays with cupcake papers.

Place oil, eggs, caster sugar and vanilla essence in a bowl and whisk to combine.

Add half the sifted flour and half the milk and stir to combine.

Add remaining milk and flour and combine.

Spoon mixture into cupcake trays and sprinkle with frozen berries of your choice.

Bake for 20 minutes or until a skewer inserted in the center of a berry cupcake comes out clean.

Stand in trays for 5 minutes before turning onto a wire rack to cool.

When cool, dust with sifted icing sugar.
