Banana Loaf
This is a really easy banana cupcake recipe. Great teamed up with either chocolate ganache or cream cheese frosting.
It is supposed to be made as a banana loaf but I bake it as cupcakes and they are perfect.
2-1/2 cups all-purpose (plain) flour
1 tablespoon baking soda
1/2 cup butter
1 cup white sugar
3/4 cup brown sugar
2 eggs
4 bananas, mashed
2/3 cup buttermilk
1/2 cup chopped walnuts (optional)
Preheat oven to 350F (175F).
Line cupcake trays with cupcake papers.
Cream together butter, white and brown sugar and beat until light and fluffy.
Beat in eggs, one at a time, beating well after each addition.
Stir through the mashed bananas.
Sift together the flour and baking soda and fold into the butter mixture alternately with the buttermilk.
Gently stir through the chopped walnuts, if using.
Spoon mixture into cupcake trays.
Bake for about 15 minutes or until a skewer inserted in the center of a cupcake comes out clean.
Stand in trays for 5 minutes before turning onto a wire rack to cool completely.
