Banana Cupcake Recipe

This is a recipe for banana bread that I now make as cupcakes. This banana cupcake recipe is really easy and doesn't require an electric mixer.
3 ripe bananas, mashed
1 1/2 cups all purpose/plain flour
4oz (125g) melted butter
3/4 cup caster sugar
2 eggs, beaten
1/2 cup walnuts
1 teaspoon baking soda/bicarb soda
1 teaspoon vanilla essence
Preheat oven to 350F (180C).
In a mixing bowl, combine mashed bananas and melted butter and stir gently.
Add in beaten eggs and vanilla and combine.
Gently stir in sugar and baking soda.
Fold in sifted flour and stir until just combined.
Fold through walnuts.
Spoon mixture into cupcake trays, lined with baking papers.
Bake for 20-25 minutes or until a skewer comes out clean.
I like to frost these with cream cheese frosting but everyone in my family eats them as they come out of the oven so I don't usually get around to frosting. They taste great either way.
