Amish Whoopie Pie Recipe

I have always been told that this is an authentic Amish whoopie pie recipe.
1 cup sugar
4oz (120g) butter, softened
1 egg
2 cups all-purpose (plain) flour
1/2 cup cocoa
1 teaspoon vanilla essence
1/2 cup buttermilk
1 teaspoon baking soda
1/2 cup hot water
Preheat oven to 350F (180C).
Grease whoopie pie tray or line baking tray with baking paper.
In the small bowl of an electric mixer, cream together sugar and butter until light and fluffy.
Add egg and beat until well combined.
Sift together flour and cocoa and add to creamed mixture, alternately with buttermilk.
Add the vanilla and dissolve soda in hot water and add last.
Mix well.
Drop spoonfuls of mixture onto whoopie pie or baking tray.
Bake for 8-10 minutes.
Leave on trays for a couple of minutes before turning onto a wire rack to cook completely.
Make sandwiches from 2 cookies filled with your choice of whoopie pie filling.
