Mini Tea Cakes are a cupcake version of the old-fashioned cinnamon teacake.
Teacakes are the perfect afternoon tea treat. Fresh from the oven, it is impossible to limit yourself to just one cinnamon cupcake!
This is such an easy cupcake recipe and one that I keep turning to when friends or family say they will call in in 30 minutes. You can be taking them out of the oven, dishes already done, by the time they arrive.
I love to serve them with butter when they are still warm.
This is a fantastic recipe for the novice cook to start with.

Line cupcake trays with cupcake papers.
Cream butter, sugar, egg and vanilla essence until light and creamy.
Stir in sifted flour and milk and beat lightly until smooth.
Spoon mixture into cupcake trays.
Bake for 10 minutes.
Brush tops with extra melted butter and sprinkle with combined sugar and cinnamon.
